2025 Bannockburn Sauvignon Blanc
Bannockburn Sauvignon Blanc isn't about passionfruit and tropical punch. It is about texture, tension and restraint.
Sourced from two small organically certified parcels planted in 1996, this wine digs deep into the estate's unique clay-over-limestone soils. It is a serious expression of the variety that looks to the Old World rather than the New World for inspiration.
Simple winemaking here from winemaker Matt Holmes: handpicked, whole-bunch pressed and fermented in stainless steel and some older barrels. Crucially, it spends three months resting on lees, which builds a lovely waxy mouthfeel that coats the palate without weighing it down.
Expect savoury aromatics of hay, blackcurrant leaf and cut grass. The palate is driven by green apple and pear, with a distinct mineral thread and a steely, dry finish. Classic Bannockburn saltiness abides. It is focused, food-friendly and distinctly different to most Australian Sauvignons.
