Each parcel was fermented with wild yeast and aged in French oak, around a third new, before blending. The focus here is always on refinement over size, letting the structure and texture carry the fruit.\u003c\/p\u003e\n\u003cp\u003eThe wine is dark and pure, with layers of cherry and spice sitting over fine tannins and a dry, savoury finish.
